Quick n Easy Vietnamese hot and sour soup

Hey guys i love vietnamese hot and sour soup, but it can be time consuming to make. So i was thinking of how i could make it easier but with the same flavour! So here is my quick and easy version of the recipe.


Ingredients:

6 cups chicken stock

2 cans of diced tomatoes

1/4 cup fish sauce

1/3 cup lime juice

1 can of mushrooms or you can use fresh or dried mushrooms i use dried

Salt and Pepper

1 bag of small shrimp de-veined and peeled.

3 green onions cut for garnish

Directions:

1) In large pot add all ingredients but shrimp

2) bring to boil then simmer for 10 mins. Then add shrimp and cook till shrimp turn pink
If using dried mushrooms do not add shrimp till mushrooms become soft.

3) Pour into bowl and serve garnish with green onion

option: if i have left over rice i simply place some in a bowl then ladle soup over top and eat it that way. Good way to get rid of left over rice!!

Southwest Pasta Bake

Ingredients

1 chirizo sausage
1/2 pack of bacon
1 large onion
2 cloves of garlic
1 bag of pasta of your choice
2 tsp of paprika
1 tsp of cumin
1 tbsp of flour
3 cups of milk
1 1/2 cup grated cheddar cheese
hot sauce
salt and pepper
bread crumbs

1. preheat oven to 350 degrees

2. cut up bacon into lil cubes then fry in sauce pan over medium heat

3. dice onion and mince garlic add to bacon. Cube chirizo and add that as well

4. Bring large pot of water to boil for pasta add salt.

5. when bacon is crispy and onions are soft add the flour then stir and cook for bit then add your milk and over medium heat bring to light boil then turn heat down.

6. add cheese and paprika and cumin to your sauce and hot sauce to your liking aswell as salt and pepper. Continue to stir as not to burn.

7. add past to your water cook as directions then drain when cooked. stir in sauce then place in greased 9x13 pan and cover with bread crumbs bake in oven for 20 mins and then enjoy!!!

Leftover turkey shepperds pie

Hey guys this recipe is one of my favourites and i usually make it the day after i cook a bird be it turkey or chicken. With my left over mashed potatoes. But here's the recipe for all  of you to enjoy.

Left over turkey
Turkey gravy
Frozen peas
Mashed potatoes:
5-6 large potatoes peeled and cubed
3 cloves of garlic smashed
1 cup of mozzarella cheese
1/2 cup milk
2 tbsp butter

 1. In large pot bring water, potatoes and garlic to boil.Cook potatoes for 15-20 mins. Drain then i use an electric blender i add milk and butter and whipe potatoes till creamy smooth and then continue as i add cheese.
 2.Place leftover turkey on bottom of caserole dish mines 9x13 about 5 inches deep. Then cover with gravy that you have leftover or freshly made. Add frozen peas on top and then cover with mashed potatoes. cover with foil.
 3. Bake at 350 degrees for 45 mins with foil then another 10 without foil. cool 10 to 15 mins then serve and enjoy!

Poor Mans Beef Stroganoff

1 package of lean ground beef
1 small onion diced
1 clove of garlic minced
1 or 2 cans of cream of mushroom soup
1 package of egg noodles (large)

1. first off bring large pot of salted water to boil
2. in non stick frying pan on medium heat saute onion for 4 mins then add garlic cook for minute stirring then     add ground beef.
3. When beef is browned add noodles to water and cook as directed.
4. Drain beef of excess grease and add can of mushroom soup 2 if you made a huge package of ground beef.  Lower heat to a simmer around 2 or 3 warm through.
5. when noodles are done add beef and mushroom soup mixture and serve.
